來自宏都拉斯的Pantanal，由於一年四季有近70%的時間都處於霧氣之中，這讓咖啡的表現變得相當柔和。Caballero家族在摘採完果實之後，將果實放置於不透氣的袋子，進行短時間的36小時發酵，再放置於曬床上乾燥。這個批次酸值柔和，有紅葡萄及蘋果汁的風味調性，溫和舒服。
