Description

莊園La Pedro為Caballero家族的地塊之一,取名為前任莊園主Pedro之名。La Pedro的地塊歷史相當悠久,莊園內的咖啡樹也有近10年的生長歷史。由於樹種已經相當成熟,搭配莊園固定的土壤偵測及養分回填,每年的穩定度都非常高。

La Pedro主要以卡杜艾為主,但也有種植少數的異國種。而Marysabel和Moises選擇種植卡杜艾是因為該品種較適合當地的黏質土,他們充分給予該品種所需要的養分及植栽照顧,確保咖啡樹的養分吸收足夠。這樣生產出來的卡杜艾,相較於原本帶有的強烈堅果調性,反倒有更多的水果風味呈現。

而關於這個特殊日曬,是將果實採收之後放入發酵桶,密封發酵5天。過程中以PH數值為發酵進程的目標點,前3天發酵降至PH4.5,最後收尾目標PH數值為3.7,發酵五日環境溫度皆為25度。發酵結束後,再將果實放置在室內曬床進行單層曝曬為期23天而成的。
